If we don't need that much protein, and we're already eating too much fat,
what then are we supposed to eat? The answer is carbohydrates--foods rich
in starch and natural sugars such as breads, grains, pasta, beans, potatoes and
some vegetables. These starches are called "complex carbohydrates" because
they are made up of a number of sugar molecules or "simple carbohydrates."
After ingestion these complex carbohydrates are broken down into simple sugars and
transported via the bloodstream to the liver, where they are converted to glucose.
Some of this glucose is then converted to glycogen and stored in the muscles and liver.
Carbohydrate is a "clean-burning" fuel in that it does not have the
toxic by-products of fat and protein for your body to deal with.
