Opting for a Vegetarian Diet

If you do opt for a vegetarian diet, you need to understand some basic principles of nutrition. By now you've probably heard that animal protein is "complete," while vegetable protein is not. In animal products, all the amino acids (the basic constituents in protein) are present so that when you eat meat, you get all the basic elements of protein you need. These amino acids are used in different ways by the body; some are taken apart and put back together in other forms to meet particular needs. Excess amino acids are broken down into sugars and stored as fat.
