Berry and Melon Soup

First of all, it is a dessert—and a great one if you can go on a berry-picking expedition. As a novice cook, I came across countless recipes for fruit soups but none of them ever mentioned when to serve them. My next question was, what’s the difference between a fruit soup and say, melted ice cream? Well, it’s not sticky and lukewarm, for one thing, nor is this recipe as fattening. Use any favorite combination of seasonal fruits for a bright, fresh taste. I like the ultra-sweet honeydew as a base dotted with whole berries, but you can puree the berries with the melon for a colorful sweet/tart effect, or reverse course and make the soup with the berries and garnish with miniature melon balls.

  • 1 honeydew melon
  • 1/2 cup fresh orange juice
  • 1 1/2 cup unflavored nonfat yogurt
  • 4 tablespoons sugar
  • 12 ounces red raspberries
  • 1 tablespoon minced fresh mint
  1. Halve the melon and discard the seeds. Spoon the pulp into a blender or food processor. Puree the melon with the orange juice and yogurt until smooth.
Quick Tip
Substitute strawberries, blackberries, or any local variety, and any other very ripe, very sweet melon.
  1. Add one tablespoon of sugar at a time, blend thoroughly and taste. Continue with the remaining sugar, stopping when the soup is sweet but not cloying. Chill thoroughly. Before serving, dot with the berries and a sprinkle of mint.

Health Notes
It’s not just a pretty face, though nothing dresses up a plain dessert like a raspberry sprinkled here and there. The raspberry actually packs a mean nutritional punch. It’s one of those gaudy fruits high in antioxidants (the more color the more disease-fighting antioxidants and flavenoids). One cup of raspberries provides almost a third of the recommended daily intake of dietary fiber, a whopping 8 grams compared to 2 grams in a typical slice of whole grain bread. The little red beauties also contain plenty of ellagic acid, under study for its potential cancer-fighting properties. Berries are also a good source of folic acid, important to women of childbearing age to prevent birth defects. And to top it off, berries give you a jolt of vitamin C.
